Gillian Hirst

As an award-winning and celebrated chef with over 30 years’ experience, Gillian brings extensive knowledge and world-class dining to Aveo Newstead’s residents. As Executive Chef, Gillian will focus on sophisticated menus that offer delicious and nourishing meals.


David Fryer

With over 20 years’ experience, including preparing meals for the Royal Family, David has built a name for himself as one of the Gold Coast’s leading chefs. David now enjoys bringing his innovative techniques to Aveo’s residents as Regional Catering Manager.


James Stack

After working at the iconic Waldorf Hilton and as Executive Chef for the Beijing Olympics, James now works as Aveo’s National Food Services Quality Assurance Manager and is passionate about delivering quality food to Australia’s seniors.
